{Happy St. Patrick’s Day!}


I hope everyone has a great day today! I wanted to share with you some great St. Patrick’s Day recipes that I’ve found! Over the Christmas holiday I came across these:

The recipe on the back talks about making the cookies chocolate but too much chocolate just doesn’t do it for me so I went with the regular chocolate chip cookie recipe and added the chips in! It was DELICIOUS and a HUGE hit.

When I came across this I knew that I had to try it because it was perfect for St. Patrick’s Day especially since the Dark Chocolate & Mint chips are limited edition. You can use regular chocolate chips with these, mint extract and green food dye!

I based what I was doing off of the Nestle Toll House Chocolate Chip Cookie Recipe!

The first thing I did was combine the flour, salt and baking soda. Then I combined 1 cup of butter, 3/4 cup granulated sugar, 3/4 brown sugar, 1 teaspoon vanilla, Mint extract to taste {about 1/4 teaspoon}, and green food dye to desired color {about 15-20 drops}.


Then I mixed it. Looks kinda gross right? lol
Then I mixed in the dry ingredients and then the chocolate chips!

Then once it’s all mixed up feed it to your baby to fatten them up! {don’t worry I didn’t REALLY give it to him, although the picture sure looks it right!?}



Then I scooped them onto the baking pan!

Then I popped them in the oven and out came the finished product, not as green as I expected :/

I’m pretty sure I know exactly what I did wrong, since I was following the regular chocolate chip recipe I forgot that the temperature should be lower to accommodate the mint! Much more experienced bakers than I, is this what happened? Is that why my cookies were brown on the outside but green on the inside??


Ingredients

2 1/4 Cup Flour
1 teaspoon Salt
1 teaspoon Baking soda
3/4 Cup Granulated Sugar
3/4 Cup Brown Sugar
1 teaspoon Vanilla Extract {I always add another teaspoon}
To Taste Peppermint Extract
To desired color Green Dye
2 large Eggs
12 oz Semi-Sweet Chocolate Chips

Directions

1. Combine Flour, Salt and Baking soda

2. Beat softened butter, sugar, brown sugar, Vanilla, peppermint and green dye

3. Add eggs one at a time to mixture

4. Add flour, salt and baking soda mixture slowly to mixture

5. Add Chocolate Chips to mixture

6. Spoon mixture onto baking pan bake for 9-11 minutes at 350 degrees

It wouldn’t be such a bad idea to mix in some Bailey’s or Bailey’s Mint into the Mint Chocolate Shamrock Shake for the adults or the kids if you need them to get to sleep earlier ;)

  2. I wish I had done something festive today! Lol!!! I have no idea why the cookies turned brownish. The dough was super duper green!!!

  4. Those look good, thanks for sharing! I've never seen the mint chocolate chips here.

  5. Use a sugar cookie recipe (like the Betty Crocker site says) instead of a chocolate chip cookie recipe. Chocolate chip cookies always turn brown, maybe because of brown sugar, so use a cookie base that stays white even when baked so the green shows through.

  6. Yum!!! We love the chocolate mint cookies around here, I always but a ton of the mint chips at Christmas becasue you can't get them any other time of the year. Not to long ago our WalMart had them on clearance for $1 a bag yep snagged those up too!
